The kids love them too!
Grate 4-5 potatoes and 1 onion and then squeeze until the water is out as best you can. Drop the dried potato mix into a bowl and add an egg, a couple of tablespoons of flour, a little bit of minced parsley, a tiny pit of minced scallion, a little lemon juice (maybe a tablespoon.. about half a lemon) - a pinch of baking powder and a little salt and pepper. Sometimes I toss in just a little bit of cheese. Swiss goes nice. Mix it together. It will look like.. I don't know it doesn't look like pancake batter. It's like grated potato with mush
Heat a pan with oil (light oil like canola) and add a pile of the potato mix. flatten it just a little and then cook until golden. flip and let the other side get golden. I top with a little bit of chopped scallion and serve with sides of sour cream and apple sauce.
