Stuffed zucchini?
I have 2 huge zucchinis from someones garden and am going to make a nice batch of zucchini bread but I am also thinking about making stuffed zucchini. Can I make the filling like I would make for stuffed peppers and just stuff the zucchini instead? (cut & scoop it out like a boat). Any ideas/ great recipes?
ETA: I'd like to do a ground beef/rice filling.

You can pretty much stuff the zucchini with any filling once you scoop it out.
whatever you use for stuffed peppers would work or if you have any good stuffed mushroom recipes that stuffing works well too.
I usually make it as a side dish so i do breadcumbs, some chopped roasted peppers, seasoning and some cheese.
if you are doing it as a main dish i would use some meat to make it more filling.

definitely!
i recently did stuffed peppers with couscous, chickpeas, feta, fresh herbs and raisins... it was really good!
