favorite Italian sausage recipes?

Give me your favorite recipes (or not actually recipes, just dishes) that use Italian sausage!

DH's favorite is when I make it with pasta and sauteed veggies. I add tomatoes, a little tomato paste, and a god shot of white wine to make a sauce.
Comes out like a sausage/veggie stew that I put on top of rigatoni, top off with grated cheese.

No specific recipe, I use whatever is on hand.
Sneaky way to get DH to eat more vegetables !

1 package bulk sausage or links out of the casing
1 14oz can petite diced tomatoes
1-2 bags baby spinach
chicken stock/water/white wine - about 1 cup
1 box whole wheat pasta

Brown the sausage meat until cooked about 90%. Add tomatoes and liquid to make "sauce" to cover pasta.
Cook the pasta al-dente
When the pasta is almost done, add spinach to sausage, top w/pasta to wilt spinach and mix together.

Serve w/ garlic bread.

This can also be made w/sausage tortillini.

SIDENOTE: When I make sausage and peppers - my ex liked hot sausage and I liked sweet. I cut his in 1/2 and mine in pieces so we could tell what sausage was what.

Broccoli rabe, Crumbled Sausage (a mixture of both hot and sweet), garlic and whole wheat pasta...my DH's favorite dish!

Sausage Bread - cook crumbled sausage until done, mix with 1 egg and lots of shredded mozzarella cheese, roll out a pizza dough, lay the sausage on top and roll up like a stromboli, brush the top with egg and bake...my absolute favorite and everyone loves this at parties.

sometimes i make sauce with sausage in it, then put the sauce on top of the pasta and a sausage for the side.. (sort of replacing a meatball). i usually buy sweet though b/c if i put hot sausage in the sauce it makes the sauce spicy and not everyone likes it spicy (except for me!)

I make a creamy sausage and penne pasta dish that is delish.

Heat up 1 tbsp butter and 1 tbsp EVOO
Add 1 onion cut up and garlic
Add sausage removed from casing and broken up
Add white wine when sausage is no longer pink (I usually add about 3/4 cup) - cook until liquid is almost gone
Add can of diced tomatoes - cook until liquid is almost gone
Add heavy cream (as much as you want)
Add parsley

Serve sauce over penne pasta. Sometimes I add red, green and yellow peppers to make it like sausage, pepper and onion pasta.
