Salads...
Just like my hamburger post...sounds simple...
What do you put in your go-to salad? What type of dressings do you like?
~~~~~~~~~~~~~~~~~~~~~~~~~
I like GREEN lettuce - not crunchy white lettuce tomatoes cucumbers some version of onion/scalion/red onion/shallot mushroom olives
Extras: for lunch - roast beef and turkey maybe some grated cheese.
Dressings: Flavored itailans - light creamy italians, ranch.
I always laugh at my MIL b/c she'd eat a "healthy" salad with chucks of cheese in it.

House salad at Casa Style is: Baby Field Greens Ripe tomatoes OR freshly roasted red peppers if there aren't any good tomatoes to be found. Thinly sliced red onion Thinly sliced cucumber Chopped apple Cardini Brand Caesar Croutons or homemade rye croutons
And my homemade Garlic Basil Vinaigrette.

I use Romaine Hearts and then add... Shredded carrots grape tomatoes chick peas craisins almonds and a little bit of feta cheese.... I love Paul Newmann's Light Honey Mustard dressing...this Salad is what I bring for lunch everyday at work.

for me : green leaf lettuce, shredded carrots, red cabbage, thinly sliced onions, various dressings. for DH : absolutely no lettuce leaves, so it becomes cucumber, tomato, red pepper, red cabbage, carrots, onions, olives, croutons, cheese (can't break him of the crouton-cheese habit), various dressings. His 'healthy' salad is anything but.

here's what we love. i'll give you "our" names for them (i name everything so DH knows how to request a certain meal! haha)
"SoCal Salad"
mixed greens sliced granny smith apple candied walnuts sprinkle of goat cheese dried cranberries halved red seedless grapes + or - chicken
with raspberry walnut vinaigrette
"Chipotle Chicken Salad"
crunchy romaine roasted corn grilled chicken pico de gallo sliced avocado cotija cheese
with chipotle lime vinaigrette
(variation)
"Southwestern Grilled Chicken Salad"
marinated, grilled chicken breast romaine roasted corn pico de gallo sliced avocado black beans pepper jack cheese homemade tortilla strips or tostada shell
with cilantro citrus dressing
"Side salad"
mixed greens wedges of roma romatoes sliced english cucumbers shaved fresh parmesan
with balsamic vinaigrette
"Special salad"
romaine cucumber tomato bocconcini slices of provolone & soppressata (stack them together, alternating each, then slice into thin strips)
with oil & vinegar
"Grilled veggie salad" - variation on Giada recipe
romaine butter lettuce tomato grilled corn grilled zucchini grilled shrimp, chopped cubed avocado
with agave citrus vinaigrette

We use spring mix or the triple heart mix...we tend to use the Fresh Express bags, and whatever is on sale and has the furthest date, since it's only two of us and we don't want waste. We keep the salads simple...olive oil, white balsamic, lemon juice, sometimes some oregano and feta if we have it, and Texas Toast Caesar croutons. I put whatever berries we have in the house in my salad as well. Sometimes I throw avocado and chickpeas in, or tomatos. We don't really eat "meal" salads, so they tend to be lighter and just on the side.

Regular salad: mesclun greens iceberg lettuce shredded carrots mushrooms avocado cucumbers diced tomatoes sometimes Parmesan with dressing of choice.
Mango and avocado salad 2 mangoes 2 avocados mesclun greens Handful of walnuts
There is a dressing that goes with it, but I don't have the recipe now. You could use any dressing of your choice.

Spinach - nothing else. cukes carrot rounds Craisins if I have them. Occasionally some cheese.
Dip into ranch or blue cheese
Nothing too great.

YES! they all use extra virgin olive oil...
raspberry walnut vinaigrette (bottled!)
chipotle lime vinaigrette:
Mince a few peppers (2-3) from a can of chipotles in adobo, combine with juice (and zest if you want) of 2 limes, 1/2 a bunch of cilantro (chopped), salt, pepper, garlic powder (to taste), a squeeze of agave (to sweeten, or you can just use sugar if you don't have agave) and about a tsp. of cumin. Mix that all together, then whisk in olive oil until it reaches desired consistency.
What I do, is use half of that to marinate the chicken, then half for dressing!
with cilantro citrus dressing:
use the juice and zest of your favorite citrus (I like lemon, lime, & orange) and squeeze into a bowl. mix in 1/2 a bunch of chopped cilantro. whisk in olive oil until it reaches desired consistency. if too tart, add in agave (or sugar) to sweeten.
with balsamic vinaigrette:
mix together chopped garlic (1 clove), about 1/4 cup balsamic vinegar, a squeeze of dijon mustard, salt and pepper. whisk in olive oil until desired consistency.
variations: use white balsamic instead, use whole-grain mustard instead of dijon, add in some fresh or dried herbs, add in brown sugar, add red pepper flakes, add in some agave, honey or brown sugar to sweeten...
with oil & vinegar (self-explanatory!)
with agave citrus vinaigrette:
haha now I feel like all of my dressings sound the same when I write them all down at once!
mix the juice of 1-2 lemons with a tbsp or so of agave nectar (can use honey instead if you don't have it). whisk in olive oil and then add salt & pepper to taste.
