*MEMORIAL DAY WEEKEND MENUS!*
Let's hear them!
SAT - TBD. it's fight night + mom is here...
SUN - oven roasted ribs, baked beans, salad, cornbread. strawberries & cream pie for dessert
MON - Bleu cheese burgers, kettle chips, veggies & green goddess dip, watermelon lemonade aka the "will-you-marry-me-rojerono" meal 
TUES - buttermilk grilled chicken breasts, cheesy mashed potatoes, fresh sliced tomatoes
WED - spaghetti all'amatriciana, garlic bread
THURS - whole roasted chicken, couscous, zucchini roasted with onion & fresh thyme

BBQ at friends house
Mon:
-Black pepper burgers
-Margarita chicken wings
-BH hot dogs
-German potato salad
-Summer slaw
-Greek pasta salad w/spinach
-All American macaroni salad
-Italian pasta salad w/salami, pepperonicini, provolone, etc
-Grilled marinated skirt steak
-Firecracker shrimp and chicken kebobs
-Lemon pepper veggie skewers
-Chips, dips, salsa and guacamole
-Berry lemon smoothie pie
-Strawberry shortcake
-Sour cream pound cake w/blueberry compote
-Fruit salad
After that....KEY WEST BABY!!!!!

I'm lame.. we have had some changes in plans.
Saturday: I think we are going to a BBQ
Sunday: Air Show. I'm making a fresh turkey breast and slicing it with the deli slicer. We'll have turkey and cheese heroes, fruit salad, chips, pickles, tortellini salad.. and whatever our friends make. And watermelon lemonade with vodka! After the show it's off to IL's for BBQ
Monday: Roasted Garlic Shrimp, Corn on the cob, Tomato Mint Salad
Tuesday: Sticky Chicken Legs, sauteed asparagus, Rice Pilaf, cucumber salad
Wednesday: Spaghetti with Summer Sauce and turkey sausage, House Salad, garlicky bread.
Thursday: Steak, Grilled Squash, Corn Salad.
Friday: Breakfast Pizza, Citrus Salad

Get watermelon flesh and de-seed it (if seeded) - put it in the blender. Add lemon juice, water and sugar (or simple syrup) to taste. Add vodka if you want it spiked. Pour over ice and garnish with a sprig of mint.
I don't use measurements because .. well because different people like it different ways. I like it tart - my hubs prefers it sweeter. You just kind of feel your way!

SAT - Hung out at boat all day. Grilled some sausages & hot dogs.
SUN - BBQ at Mom's. Burgers, hot dogs, baby lamb chops, mac salad, baked beans etc. I did most of that cooking!
MON - BBQ at DH Aunt's house. I made a tray of Sausage & Peppers & macaroni salad.
TUES - BBQ Ribs, Corn on cob, Mashed sweet potatoes
WED - Chicken sausage, String bean & tomato salad, risotto
THUR - Greek Night with my friend
FRI - Striped Bass (caught by my friend this weekend!) Couscous, sauteed spinach

Sat: Burgers and Fries
Sun: BBQ Pork Ribs, Corn on the Cob, baked beans, tomato & cucumber coban salad, and corn bread, Strawberry Shortcake and Boston Creme Pie
Mon: BBQ Rib Eye Steak, creamed spinach, mac n cheese with broccoli, leftover corn on cob, cornbread, and salad, fresh watermelon and honeydew
Tues: working late, probably leftovers or pizza
Wed: Chicken Cordon Bleu and Kiev, Red Mashed potato, & steamed veggies
Thurs: Sausage & Peppers with Crusty Semolina or French bread
Fri: BBQ Chicken on tossed salad

My menu is very lame this week because I'm not really home! I ate Indian food 3 days straight for a three-day wedding and then I leave again to visit family!
Saturday: Wedding in Chicago (Day 1) - no cooking
Sunday: Wedding in Chicago (Day 2) - no cooking
Monday: Wedding in Chicago (Day 3) - no cooking
Tuesday: Salad with Mango Chicken
Wednesday: Out-of-Town in Boston - no cooking
Thursday: Out-of-Town in Boston - no cooking
Friday: Out-of-Town in Boston - no cooking

Sun: grilled chicken with zucchini, portobella, graffiti eggplant, and grilled french bread
Mon: grilled beef sirloin tips (marinated in Worcestershire sauce, Jack Daniels, dijon mustard, onions, brown sugar, garlic, salt and pepper) homemade guacamole, tossed salad with fresh mozzarella, refried black beans, tortilla chips
Tues: chinese
Wed: my MIL's gallo pinto, braised chicken drumsticks, avocado salad
Thurs: tortellini pasta salad with grilled zucchini, bellas, tomatoes, cucumber, fresh mozzarella
Fri: out
