Re: Does anyone have any yummy & healthy CHILI recipies?
I actually have a delicious recipe!! i got it from this great book body for life.
8 portions lean ground beef (2lbs) 1 white onion, chopped 8 cloves garlic, minced 1 green bell pepper, diced 1/4 cup fresh italian parsley, chopped 3 jalapenos, seeded and chopped 1/3 cup fresh red chili powder 1 1/2 tsp ground cumin 3 cans (15oz) low fat reduced sodium beef brother 1/3 cup dry vermouth (optional) 1 can (28oz) crushed tomatoes 1 can (15oz) kidney beans, drained and rinsed 1 can (15oz) chili beans 1/2 cup sharp reduced fat cheddar cheese, shredded
1. Place a large pot over medium heat. Add ground beef, onion, garlic, bell pepper, parsley and jalapenos. cook, stirring occasionally until ground beef is no longer pink, about 8 minutes.
2. Stir in chili powder and cumin. cook for another 2 minutes
3. Add beef broth, dry vermouth, tomatoes and beans. bring to a boil over high heat
4. Reduce heat, cover and simmer for 90 minutes
5. Ladle a portion of chili (about 1 1/2 cups) into each bowl and top with about a tablespoon of cheese.
It's around 519 for 2 servings..
8 servings in total

Re: Does anyone have any yummy & healthy CHILI recipies?
weight watchers chili: (2 pts per cup)
*1 lb 97% FF ground beef (you can do turkey, but I like the beef better. *2 cans diced tomatoes (zesty if you want) *1 can low sodium FF beef broth * 2 red bell peppers chopped *1 zuccini and 1 squash chopped * 1 can water chestnuts (the recipe calls for parsnip...but I like these better) *1 can kidney beans (large) *2 cans black beans *1 packet chili seasoning
I usually cook it for atleast 2 hours... Meat is browned in a pan first
**Beans are drained and rinsed
ENJOY!

Re: Does anyone have any yummy & healthy CHILI recipies?
i always use ground turkey meat for my chili, and i add 2 different kinds of beans- either red and black or white and red, whatever...throw a little shredded cheddar cheese on top...
i think its rachael rays recipe-
i once had someone who likes "real meat" eat it and she had no idea that it was turkey meat!

Re: Does anyone have any yummy & healthy CHILI recipies?
Mine!
1 lb ground turkey or beef 2 tbsp oil 1 can kidney beans, drained and rinsed 1 can black beans, drained and rinsed 4 carrots, coarsley chopped 2 peppers, coarsley chopped 1 can tomato paste 1/2-3/4 cup bbq sauce 1 8 oz jar of medium salsa 1/2 red or white onion, finely chopped 1 tbsp garlic powder 1 tbsp onion powder 2-3 tbsp chili powder 1/2-1 tsp red pepper flakes
In a stockpot, add the vegetables, tomato paste, salsa, seasonings, bbq sauce, and beans. Bring to a simmer.
In a seperate skillet, heat oil. Add meat and cook until mostly browned. Drain oil and fat. Add meat to veggie mixture.
Cook on medium high heat for one hour, stirring periodically. Taste chili after 30 minutes, and add additional seasonings if desired.
Serve with cornbread, rice, or tortillas. Top with cheddar or American cheese if you like.
Serves 6
In a slow cooker: Cook on high heat for one hour, then on low for an additional four.
Vegetarian-friendly: Reduce the amount of salsa to 6 oz and 1/2 can of tomato paste.
