Healthy desserts?
I need some healthy dessert ideas!
My BIL and nephew basically want to eat dessert EVERY night and end up bringing home cheesecake, eclairs, carrot cake, chocolate cake, etc. and while they're all delicious... they are not helping my diet AT ALL! I've been trying to just have 1 bite and then leave the room... but that's no fun!
I made a really yummy blueberry bread one night... but I need some healthy dessert ideas!

Baked apples, stuffed with raisins or cranberries.
Jello pudding made with skim milk with a little whipped cream!
Skinny cow ice cream. Lots of choices!
Freeze sliced bananas on a cookie sheet. Throw in food processor for "banana ice cream" you may need to add a little sugar.
Pie is not to bad if you don't eat the crust.
I'm a big desert person but always trying to stay thin!

Fruit & yogurt Sorbet (love the Haagen Daaz mango and lemon)
Ladyfingers dipped in espresso.
Angelfood cake with a smear of nutella, topped with sliced strawberries.
I like sliced strawberries sprinkled with a little sugar to macerate, then used as a topping for vanilla ice cream.

One of my favorite standbys tastes like a candy apple:
take an apple and peel the top (about 1/3). Sprinkle with jello mix to taste (cherry/raspberry/etc.) - you can use sugar free or regular. Microwave until apple is hot and soft. The juice produced will mix with the jello.
Delicious and easy!

This is one of my favorites. It's a healthy version of a trifle. It was printed in SELF Dishes a few years ago:
Raspberry Trifle
Serves 12
Ingredients Custard sauce * 2 cups 2 percent milk * 1/2 cup sugar * 1/4 cup cornstarch * 1 tablespoon freshly grated orange zest * 2 large eggs * 2 teaspoons vanilla extract
Filling * 20 ladyfingers * 1/4 cup tawny port (or Grand Marnier) * 3 packages (6 oz each) fresh raspberries
Preparation : Stir milk, sugar, cornstarch, and zest in a saucepan. Bring mixture almost to a boil over medium heat. Beat eggs in blender on low speed and slowly add hot milk mixture. Return to pan.
Cook over low heat (do not boil), stirring constantly, until custard thickens enough to coat the back of a spoon, about 7 minutes. (It took me closer to 15 mins). Stir in vanilla. Cool in refrigerator, stirring once.
To assemble, place a layer of ladyfinger halves in the bottom of a glass serving bowl. Sprinkle with a little port. Spread 1/3 berries and 1/3 custard on top. Continue layering, ending with custard. Cover with plastic wrap; refrigerate 1 hour.
Nutrition Info: 206 calories per serving, 3.5 g fat (1.5 g saturated fat), 38 g carbs, 5.5 g protein

Pudding pie made with sugar free fat free pudding
Angel food cake with strawberries
Lowfat ice cream- skinny cow is good, their chocolate peanut butter flying saucers are sooo good.
baked apples with cinnamon
Trifle layered with fruit, cool whip and angel food cake
