Need ideas for "survivor breakfast"
At work, for the last 7 weeks before the school year ends, every Friday we have "Survivor breakfast" where one grade level and/or support staff (SLPs like me!) bring in some breakfast food and make a potluck breakfast for the staff.
Sooo... I need some ideas!
Something that doesn't need to be served hot or made the same day. Needs to travel easily too. And something that will appeal to most people.
My first year I made chocolate chip coffee cake and first off, only ONE piece was taken... and secondly, someone snatched my 9x9 pan!
Last year I copped out and brought a Box of Joe from Starbucks.
Would love your ideas! What item do you tend to gravitate towards at a potluck breakfast?

Make this crumb cake. Lots of girls on here have used it. It's a delish dish. You can make in a throw away alum. pan
Crumb Cake
Any Duncan Hines cake mix with 3 eggs and 1 1 /2 cups water. The Duncan Hines cake calls for oil DO NOT USE OIL IN THIS RECIPE!
Mix and put in large roasting pan with tin foil (Reynolds Release) and grease and flour tin foil. (Only use tin foil if you plan on transporting cake to another plate. If you plan on serving in the pan you use, no need to use the foil.
Bake 20-25 minutes at 350 degrees.
While cake is baking make crumbs
Crumb topping
3 sticks margarine (or butter) melted3 cups flour 1 cup sugar 1 tbsp cinnamon 2 tsp vanilla extract 1/8 to ¼ tsp almond extract
Mix all ingredients until solid – when cake is done break up and sprinkle mixture over top – put back in over and bake again for another 25 minutes. Let cake cool a few minutes and sprinkle top w/confectioner’s sugar

Thanks Marybeth! I didn't want to do another coffeecake/crumbcake since nobody ate it at the last one! But thank you so much for the suggestion and recipe!

Here's another one that's good.
If you have access to a refrigerator, store them in there. They taste better cold
I've made this one a bunch of times...LOVE IT.
Ingredients Saltines (unsalted tops) 1 cup butter 1 cup light brown sugar 1 ½ tsp. Vanilla 8 oz. Chocolate chips (i use the whole bag) 8 oz. Toasted pecans, coarsely chopped
Heat oven to 425 degrees. Spray a cookie sheet with Pam and line it with parchment or wax paper. Line parchment paper covered cookie sheet with saltine crackers leaving little or no spaces (you may have to break crackers in order for them to fit). Don’t go crazy if the edges are uneven, it will all work out in the end.
Melt 1 cup butter and 1 cup light brown sugar in saucepan. Once they are melted together, simmer for 3 minutes. Take butter/sugar mixture off of heat and stir in 1 ½ tsp. vanilla (careful, it will sputter a little).
Pour mixture over crackers and spread so all crackers are covered. You may want to drizzle the mixture back and forth over crackers so you don’t have to spread so much.
Bake in oven for 5 minutes. Remove pan from oven and rearrange crackers so they are even (they will move a little while they baked). Sprinkle chocolate chips over crackers and let sit for a couple of minutes until chips have melted. Spread out chocolate over crackers and sprinkle with pecans. Put in freezer or refrigerator to cool. Once cool lift parchment paper and crack cookies like peanut brittle. Enjoy!

something not too labor intensive
fruit salad mini croissant (I saw a "cheater" version once with ready made crescent rolls with a piece of dark chocolate baked in the middle.) nun's puff (I've never used this recipe, I get mine from better homes and gardens, but it looks the same) I would bring these in with some honey and maple syrup. so easy and I love them.
