Cod fillets

I am making Cod tomorrow night. I need something different. What would you do with it? I don't want to fry it.

I would bake it with some old bay seasoning, sliced lemons....maybe some capers if you have.

actually, I am making exactly this tomorrow night...I am serving it with couscous and either chard or spinach.

you could also use it to make fish chowder, which I love.

Saw this is one of the food blogs - I'm sure you can substitute something else for the carrot if you wanted!:


Spread one side of each fillet with a generous amount of basil pesto. Sprinkle each with shredded carrot. Roll up starting on the short side. Secure with toothpicks. Place seam side down in a baking dish. Toss together plain panko bread crumbs, grated lemon peel, finely minced garlic, salt and pepper, and brown until crispy in a small saute pan that was drizzled with olive oil. Sprinkle crumb mixture on top of fish rolls and another quick drizzle of olive oil. Bake 375F oven for 20 to 25 minutes or till fish flakes easily with a fork.

this can be halved for 4 main course servings

Hayley, that looks great but I would have to replace the carrots...the texture would KILL me....hmmm...with a pesto, I guess another green.

I make them seared and LOOOVE it.

Squeeze lemon over the filet and then season with salt and pepper. Get a tablespoon of oil SUPER hot in an over safe pan on the stove. Once that oil is nearly smoking I toss in the filet and let it cook for a minute. Add grape tomatoes (tossed with some thin sliced shallots and garlic in a bit of olive oil, salt and pepper) to the pan and let it cook another minute. Then throw the whole pan in an oven preheated to 375 for about 8 minutes.

When it comes out I sprinkle some fresh parsley over it and serve it up with a side of salt roasted baby potatoes or rice pilaf and some sauteed spinach or Kale. It is sooo good and so simple.

Its not different but I marinate it in olive oil, garlic and Lemon. Then I grill it....soo good. Just had this the other night
