Fried Spinach?

I was thinking about making this as a side to Tilapia fillets. Anybody have a good recipe to share?

Fried or sauteed? If sauteed, I just heat up olive oil and crushed garlic in the frying pan and then add the fresh spinach (I like the baby leaves) and cook it down, tossing frequently with thongs. Little salt and pepper when done.

You could also do some variations, like add some good parm cheese right at the end of doing the above

You could also sautee the spinach in just some olive oil and in a separate pan heat some olive oil, add some minced garlic, cook about a min or less-dont burn the garlic. Then add some italian style breadcrumbs, stir frequently. It will get nice and toasty and flavorful. You can top the spinach with the breadcrumb mixture when the spinach is done.

It will give it a nice crunchy texture and garlic flavor

I would be interested as well! One of my favorite restaurants makes this and it's fabulous!! I asked once and they said it's deep fried!

I looooove deep fried spinach. I've never made it at home, so it's always a special treat when a restaurant serves it. Yum!

Thanks for the suggestions! I had fried spinach at a restaurant and I've been wanting to try at home. I never thought of adding breadcrumbs...that would be really easy. I'm all about easy!
