Cheesecake Tips Please!

So, how do you get your cheesecake to not crack on top? I absolutely love my grandmother's recipe, but the last time I made it, the top cracked a little.

I heard water bath helps...instead of putting the pan directly into the over...you get a a big pan something like a roasting pan put 1" water and put the cheeesake (with the spring pan) in there...the steam from the water prevents it from cracking.

Thanks! I've heard this but have always been afraid to try it...maybe this time I will (and then I'll decide which family gets the uglier cake!)

Definitely the water bath! Although I admit I'm always to lazy to do that, I just cover the top with fruit Chat Icon

Ha thanks! Problem is, some of my dh's family (including him) doesn't eat fruits or veggies!!! So I would have to cover it with chocolate! Chat Icon

i covered mine with chocolate the last time i made it.

i made italian cheesecake and that didn't crack at all.

I know me too...a friend told me a trick she said to line inside of the spring pan with foil then add the cheesecake batter...thats if you use a spring pan, because sometimes water can get inside.

Everything needs to be the same temp.

The first time I made it, I had gone food shopping in the morning and left the eggs and cream cheese out until I made them late in the afternoon. Then I baked it in a water bath and let it sit in the oven until it cooled down a little.

The second time I made it, it cracked. I didn't have the eggs at room temp and I think I over beated the cream cheese because it was very liquidly.

I cook it for 15 mins at 450, then lower the temp to 225 for an hour and half. It doesn't crack, but I'm not sure if that has anything to do with it!
