I always interchange them, but I believe previous poster is right, broth is thicker.

Stock is much more concentrated so the flavor is much more intense. Stock is cooked for many hours with spices, veggies and roasted chicken bones. When it is done it is greatly reduced from the original amount and flavor is very rich and concentrated, and the liquid is thicker.
Chicken broth is just clear chicken soup.
I just realized that you were asking about VEGGY broth, not chicken... duh
The answer still stands, just omit the word "chicken"

Totally different.
Vegetable stock is cooked and concentrated. Broth is much more salted and less concentrated.
Having said that, you can use both depending on your recipe.
