Re: Pork chops
I use center cut, but it will work on any cut of pork chop. Take chops and dip in egg, bread in corn flake crumbs, then put duck sauce liberally on top and bake it.

Re: Pork chops
A few ways... sometimes I pound them thin, dredge in flour, dip in egg and roll in bread crumbs and do a quick pan fry. Then I squeeze on a little lemon and garnish with parsley.
Other times I throw them in a Ziploc with BBQ sauce and let them soak all day - then I take them out, add a little bbq rub and grill them (basting with the bbq sauce).
I also like to do smothered chops when I'm feeling really bad! Season, dredge and pan fry - then remove and saute onions in the same pan with a little butter and a sprinkle of sugar. Add half chicken stock and half beef stock and a little cream - plus some of the reserved flour to make a thin gravy. Add back in the chops and cook through.. the gravy thickens while it cooks. Delicious.
I also like to just season and bake them - and serve them with sauerkraut and onions.

Re: Pork chops
Get the thick pork chops with the bone.
Cut pork chop in half (make a pocket) to the bone.
Put a slice of prosciutto and a slice of mozzarella in the pocket.
Dip in egg and bread crumbs.
Either fry in oil or bake in the oven

Pork Chops w/ Apple Cider Gravy (7 WW points for COMPLETE MEAL)
Ingredients 1 pound(s) uncooked red potato(es), baby-size 3/4 pound(s) savoy cabbage, cut into 3- to 4-inch-wide wedges 2 tsp canola oil 1 pound(s) lean boneless pork chop, four 4 oz chops 2 1/2 Tbsp dill, fresh, chopped, divided (plus extra for garnish) 3/4 tsp table salt, divided 1/2 tsp black pepper, freshly ground, divided 1 medium apple(s), Gala suggested, cored and cut into 12 wedges 1 1/4 cup(s) canned chicken broth 1/2 cup(s) apple cider 2 Tbsp all-purpose flour 1/4 cup(s) scallion(s), sliced 1 Tbsp Dijon mustard
Instructions Fill a large, deep skillet with a small amount of water; set a steamer basket on top and bring to a boil. Steam potatoes until almost tender, about 6 minutes. Add cabbage wedges and steam until potatoes and cabbage are both tender, about 3 to 4 minutes more. Drain and remove potatoes and cabbage to a serving platter; cover to keep warm.
Drain and carefully dry skillet. Heat oil in skillet over medium-high heat. Sprinkle pork with 1 tablespoon dill, 1/2 teaspoon salt and 1/4 teaspoon pepper; gently press to adhere seasonings to pork.
Add pork to skillet and cook, turning once, until golden and just cooked through, about 6 to 7 minutes; remove to serving platter.
Add apples to skillet; sauté 1 minute. Meanwhile, in a small bowl, whisk together broth, cider, flour and remaining 1/4 teaspoon each salt and pepper. Add broth mixture to skillet and bring to a boil; reduce heat and simmer 2 minutes. Stir in scallions; simmer until sauce is slightly thickened and apples are tender, about 1 minute. Remove from heat; whisk in mustard and remaining 1 1/2 tablespoons dill.
Lift apples with a slotted spoon onto platter; spoon sauce over top and garnish with remaining chopped dill or dill sprigs. Yields about 1 pork chop, 3 potatoes, 1 cabbage wedge, 3 apple slices and 1/4 cup sauce per serving.

Re: Pork chops
I did a variation of a Rachael Ray Pork Chop....maybe I should have used teh original though.
Cherry Glazed Pork Chops (my way)
Dredged in flour, sauteed with a small onion and a little EVOO, flip 1/2 way.
When the 2nd side was 1/2 done, I added to chicken/beef stock (forgot what was in the fridge) and a little bit of black cherry jam.
It had a little hint of sweet flavor but you didn't really get the cherry and there were too many onions.
Next time: More jam, no onions. They were good though.

Re: Pork chops
I like to coat them in cajun seasoning (Like pre-mixed Emerils') and just grill them. Coat them heavily in the seasoning and then serve with apple sauce. The combo of the spice and sweetness of the apples is amazing!!

Re: Pork chops
when I am feeling lazy
set oven to 375
season pork chops with salt, pepper, adobo, and sazon on both sides
add to roasted pan with a splash of orange juice and a splash of white wine.
cook about 30 mins or to desired doneness (I check temp with a meat thermometer)
if I am feeling Nigella-y
seaon pork chops with salt and pepper, add to hot pan with olive oil and sear on both sides. remove chops and deglaze pan with Hard Apple Cider (I like Magners or Doc's Draft) add a tablespoon of dijon mustard and a few tablespoons of heavy creams. let reduce for a few minutes, add chops back into pan for a few additional minutes to cook through.
usually served with mashed potatoes

Re: Pork chops
My friends recipe...delish!!!
BBQ Beer Pork Chops * 6 pork chops (thin sliced) * garlic powder * 1 (12 fluid ounce) can or bottle beer (Corona is the best - I've tried other kinds and they don't taste the same) * 1 (18 ounce) bottle bbq sauce * 1 onion, sliced
* Season pork chops with garlic powder and brown on both sides. Remove from pan. * Pour beer into pan, stir to get all the crust from the pork chops off the bottom of the pan. * Pour in bbq sauce. Stir together. * Add pork chops and onions. * Cover and simmer on low for 1 hour.
The sauce is great on mashed potatoes and as a salad dressing (my mom cuts up the left over pork chops and adds them to a salad with the sauce as the dressing).
