Re: Easter

I'm wondering this too--DH just said he'd like to have both our parents for Easter and it would be my first time cooking for it!

PIZZA GAINA ( EASTER HAM PIE)
The Filling:
2 lbs lean ham
1/2 stick of pepperoni
1/2 lb salami
1/2 pound provolone
1/2 pound sharp cheese
1 quart of ricotta
1/2 cup of grated Romano cheese
4 eggs
1/2 tsp black pepper
The Crust:
8 eggs
1 cup olive oil
salt
1 cup milk
6 cups flour
Dice all meats and chunk cheeses into small pieces and set aside. Beat eggs, ricotta and Romano cheese and pepper until smooth. Mix diced ingredients by hand into ricotta mixture.
Beat eggs for 1 minute and add oil, salt and milk. Add flour, 1 cup at a time, and mix with spoon until dough is stiff (Kitchen Aid works well and is much easier).

Flour board and knead until smooth. Roll dough thin and put in greased 8 inch cake pans.

Make slits on top crust. Bake at 325°F for 1 to 1 1/2 hours.

Makes three pies.

Re: Easter

I was going to post and ask as well.

Not sure if we are going to do too many fancy app's this year:
Probably chips and dip (for my DS...his favorite)
maybe shrimp cocktail
spinach dip w/crackers

Dinner:
Stuffed shells (1st course)
Honey baked ham
mashed sweet potatoes
sweet potato pie
either white mashed potatoes or potato croquettes
green bean casserole
another veggie, not sure yet
we always put pumpernickel and rye bread on the table

Dessert:
I always make cookies and brownies (my family loves mine)
Chocolate creme pie
and usually everyone else brings something
