Secrets Capri - Riviera Maya! LOVED IT! DH and I went there for our 1 year anni. and we had the most amazing time there! The food was out of this world and just everything was top notch!
Defintely look into it!

Palace resorts in Mayan Riviera -- particularly Playacar Palace and Aventura Spa Palace.
Loved it for our HM and sent SIL and her hubby their for their HM, too.

We stayed at the Iberostar Paraiso Maya in Riviera Maya back in December. we got a great deal, the food was awesome, lots of pools and a great beach. It was a very large resort though, so we had to walk a lot, but you get used to it fast. It is family friendly as well.

I have to agree as well. DH and I went to Excellence Playa Mujeres for our 2 year wedding anniversary. The room was amazing. It had a private roof-top terrace and plunge pool. Resort was so beautiful, food was good, and the spa was amazing.

Riu Las amaerica in Cancun was amazing and Catalina Royal Tulum in the riviera maya section was an excellent resort also.
