Cookie sandwich recipe?

I'm having a surprise birthday party for my DH on Saturday and I'm going to have a dessert buffet at the end of the night for people to take their desserts to go (it's at a bar and I don't think people will want dessert type food after drinking a lot). I'm making cupcakes, cream cheese sugar cookies in the shape of "30", rice krispie treats, brownies, and I would like to make an easy cookie sandwich but NOT an ice cream sandwich since people will be taking them to go. Does anyone have a good recipe for one? Thanks in advance!Chat Icon Or, if I decide to just to chocolate chip cookies, what filling should I use? The cupcakes will have buttercream frosting so not that.

I found this and thought it might be interesting and easy to do. I saw it in one of my magazines a while back and decided to look it up..

You can bake or buy soft Chocolate chip cookies (or any other flavor) and for the filling use the Marshmellow Fluff (in baking aisle) you can roll the sides with Sprinkles.

My sisters and I have been making these for years, they are always a big hit! We call them "Laurios", after my sister Laura who was the first one to make them.

Make a batch of brownie batter- either from a mix or scratch. Drop them like cookies onto a cookie sheet, and bake as you would a cookie (usually 8-10 minutes- they will flatten out). When they cool, put vanilla frosting the bottoms of 2 cookies and put them together, kind of like an Oreo. Can't go wrong with these!
