Catering Help? How much food?
I'm trying to get an idea of how much food I'm going to need to order in relation to the amount of people I am inviting. I would expect that we will have 60-70 people at DS' baptism.
Are two trays of the following enough?
Linguine w/White Clam Penne ala Vodka Chicken Marsala Shrimp Francese Eggplant Rollatine
My mom intends to make a huge tray of sausage and peppers and I plan on making the salad
They say that each full tray serves 10-12.
Do you think I should get 2 six foot heros also?

Well if each tray feeds 10-12, you can feed over 100 with just what you have listed--so I say yes it is enough.
Personally my favorite food is a piece of a 6ft italian hero so I vote yes to that

i'm just hoping that everyone will get to try everything. If a tray feeds 10-12 people meal wise, will there be enough for 70 people to try everything buffet wise? KWIM?

I wouldn't worry about that. With so many selections most people will probably take a small portion plus not everyone is going to want to eat everything (for instance I don't eat seafood so I would pass on the fish dishes).

I would add another tray of the chicken and the penne ala vodka IF you are self catering.
if you are paying someone else, I'd maybe just do another of the penne b.c you only have two starch dishes.
I always self cater, especially something as simple as penne ala vodka b/c it is mind boggling how expensive that ish is when it costs like $10 to make at home.
do NOT get 2 6 foot heros.
get ONE three foot. it's really not worth it.
get some GOOD rolls or slices of baguette/italian bread, especially for the sausage and peppers.
