Chicken Meatballs
Do you think it is OK to put a piece of wheat bread in my food processor for bread crumbs? I am on a strict diet and that's the only thing I could think of to bind the meat !

Welll, I did it and I added spinach one egg and onions and they tasted yummy!!

I used to make chicken meatballs for my son.
I put eggs in them as well as breadcrumbs. I guess if you soak the bread in milk or if you toasted it then ground it it would work.
I used to make them in 2 batches -
1/2 were spinach and cheddar cheese
1/2 were chicken parm - i used petite diced tomatoes, grated motzerlla cheese and some parm cheese.

Its more of a "method" - I'm not a measure'er. A pinch of this...
My son used to only eat bite sized food - if you cut it, he'd pick it apart. He didn't eat meat so the babysitter said to make chicken meatballs.
I got 1 package of meat, split it in 1/2 and just eye-balled it.
I put egg, breadcrumbs, italian season in both.
Spinach/cheddar: I'd defrost frozen chopped spinach and dry it out really well, then chop it again so it was small enough to go thru the whole mixture. I'd add shredded cheddar cheese "until it looked right".
Chicken Parm: I'd use the petite diced tomatoes - drained, a little parm cheese and shredded motzerella cheese "until it looked right".
A tip from Rachael Ray when she makes hamburgers - make a small one and cook it to check for seasoning. It cooks quickly and then you can adjust and cook the rest off.
