What foods say Spring to you?
I'm looking for recipes and suggestions for Spring time meals, and soups. Not necessarily special occasion meals.
I have a huge repertoire for each season of Summer, Fall and Winter dishes that I love to make but I just don't have too much that is particular for spring.
I have an arugula, chick pea, tomato and pasta dish but to me it's more summery because of the tomatoes.
Asparagus says spring to me but I'm having a hard time coming up with spring meals.

Spring is baby veggies and eggs to me.
A nice shrimp with pasta and new peas in a creamy lemon sauce.
Young chicken roasted with lemon and garlic and served with slender stalks of asparagus and some mashed new potatoes.
A vibrant primavera with baby carrots and snap peas.
A nice vegetable frittata served with a rocket salad and fresh lemon vinaigrette
Chicken baked with artichokes and spring onions.
Lamb kabobs sharing a plate with steamed artichokes and a French vinaigrette for dipping.
Spinach with carmelized fennel is a nice side dish to serve with lamb chops marinated in lemon, garlic, oil, rosemary, s&p.
Spring is an in-between season to me. You shed some of the heaviness of winter stews, incorporate some new, fresh veggies and create meals that are satisfying - but still have that air of lightness to them. I don't think you have to do ALL spring foods to make it a spring meal - I mean - a nice steak is good year round, but if you add a rocket salad and some baby carrots to the plate it becomes more 'spring like'... as opposed to a heavy garlic mash and brussel sprouts.

I always think of Easter brunch or dinner when I think spring...so things like ham, asparagus, spinach salad, pasta primavera.
