How do you make home fries?
Do you boil the potato's first? Can I have some recipes please ? I am definately adding paprika

I actually use CANNED potatoes a lot of the time! It's a scandal, right?
If I don't use the canned - I use potatoes that have been peeled and parboiled in salt water to start. If I boil my own, I let them cool before cutting them. I dry both types of potatoes as best I can without breaking them too much. When I use the can I usually buy them sliced.. otherwise I will tend to dice my own.
I always cook bacon at the same time.. you'll understand why..
In a large cast Iron pan or cast iron dutch oven (seasoned) - I throw in enough oil so that it is not deep frying.. but definitely more than a coating. When oil is warmed add a clove or 2 of minced garlic and a large chopped onion (I do a rough chop, not a mince for the onion). After about 30 seconds, add the potatoes. Season with salt and pepper and some paprika to taste.. and then add about a tablespoon of vinegar. Give it a last turn to stir gently and let them cook for about 3 minutes. When the bottom starts to brown, use your spatula to turn the mixture over and let the top side down. At this point I pour in a little bacon fat and a couple of slices of cooked bacon all broken up. Let it sit another 3-4 minutes until bottom is browned and then sift a little more paprika over the top for color and you are done!

I should have said NO MORE than a Tablespoon of vinegar. I like the little zip it adds.. but if you overdo it you will ruin the dish.
