Spinach, Sausage & Provolone Pizza:
SO good!
cornmeal for the pan 1 pound pizza dough, thawed if frozen(I used Pillsbury pizza dough - its fine) 2 tablespoons olive oil 2 links Italian sausage, casings removed (about 3/4 pound) 1 small bunch spinach, thick stems removed (about 3 cups)(I just used frozen spinach, thawed) kosher salt and black pepper 1/3 pound thinly sliced provolone
Directions 1.Heat oven to 425º F. Sprinkle a rimmed baking sheet with the cornmeal. Shape the dough into a 14-inch circle, using this method, and place on the prepared baking sheet. 2.Brush the dough with 1 tablespoon of the oil and bake until puffed and golden, 15 to 20 minutes. 3.Meanwhile, heat the remaining tablespoon of oil in a large skillet over medium-high heat. Add the sausage and cook, breaking it up with a spoon, until no longer pink, 4 to 5 minutes. Add the spinach and ¼ teaspoon each salt and pepper and cook, tossing, for 1 minute. 4.Top the partially cooked dough with the sausage mixture and cheese. Bake until the crust is crisp and the cheese has melted, 12 to 15 minutes.
Gnocci with Spinach and Sausage (although you could use any type of pasta too)
Ingredients 2 9-ounce packages refrigerated gnocchi or one 17.5-ounce package shelf-stable gnocchi 1 tablespoon olive oil 1 medium yellow onion, finely chopped 1 pound Italian sausage, casings removed 1 clove garlic, finely chopped 1 5-ounce bag baby spinach (again, frozen is fine) 1/4 teaspoon kosher salt 1/4 teaspoon black pepper 3/4 cup (3 ounces) grated Parmesan, plus more for garnishing
Directions 1.Cook the gnocchi according to the package directions, reserving 1/4 cup of the cooking liquid. 2.Meanwhile, heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the sausage and cook, crumbling it with a spoon, until browned, 5 to 7 minutes. 3.Add the garlic, spinach, salt, and pepper and cook, tossing frequently, until the spinach wilts, about 3 minutes. 4.Add the drained gnocchi, the reserved cooking liquid, and the Parmesan and toss. Divide among individual bowls and sprinkle with additional Parmesan.

It's not really a recipe, but I have made a pasta dish with sausage and spinach in the past I cook the spinach and pasta. While that is cooking, I broil the sausage and then cut it up. I then mix the sausage, pasta, and spinach with a sun-dried tomato pesto sauce (either homemade or I have used jarred version too).
