What to make with butternut squash?
I usually make a simple soup - any other ideas? It is already peeled and cubed.

you can bake it in the oven, coat with a little olive oil and season with a little cinnamon and nutmeg.
Awhile ago I made a panzanella salad that used cubed butternut squash that was really good.

I love it roasted with olive oil, salt and pepper. Ina Garten (Barefoot Contessa) has a great roast butternut squash risotto recipe too.

I steam butternut squash until it's very tender. Then I mash it up and add a little butter, cinnamon, and nutmeg. It's really good!

Ahh I forgot this one....its delicious. Its my moms fav and reminds her of pumpkin pie.

My Dad's wife makes it with brown sugar and parmesan which sounds nasty but is awesome! Bake it, mash it and then add your other ingredients

Butternut Squash with Baby Spinach
SERVES 8 ACTIVE TIME: 5 min TOTAL TIME: 1 hour
2 pkgs (20 oz each) Cleaned & Cut Butternut Squash, cut in 1-inch cubes 2 large red onions, peeled, chopped (about 4 cups) 3 Tbsp Olive Oil Sea Salt and Cracked Black Pepper to taste 1 pkg (6 oz) Fresh Baby Spinach 3/4 cup Craisins
Preheat oven to 350 degrees. Combine squash and onions on large baking sheet; drizzle with olive oil. Season to taste with sea salt and pepper; toss lightly. Roast 55 min, until tender and brown. Toss squash, spinach, and dried cranberries in large shallow serving dish.
I love this dish. I make it for thanksgiving and it is always a hit.
