I honestly just chug a lug a few bottles of wine and usually add a little CranRaspberry or Orange juice to sweeten a bit, some fruit (sliced apples, oranges - some whole grapes) and then finish it with some brandy to taste. For me.. I kind of taste as I go!

Here is one for White Sangria
Ingredients 6 cups Chardonnay or Sauvignon Blanc 1/4 cup superfine sugar 1 cup white grape juice 1 ripe nectarine, pitted and cut into thin wedges 1 tangerine, thinly sliced 1 cup seedless white grapes, halved 1 cup club soda
Directions 1.In a large pitcher or other container, combine the wine and sugar. Stir until the sugar dissolves. Add the remaining ingredients, excluding the club soda, and mix well. 2.Place the pitcher in the refrigerator and let the sangria sit for at least 1 hour (and up to 4 hours). The sangria will sweeten with time, so the longer it sits, the better. 3.Just before serving, stir in the club soda and ice cubes.
**Or instead of ice cubes that will water it down as they melt, throw a handful of grapes into the freezer and add those***
Whenever I make red sangria, I just use 2- 3 bottles of a fruity red wine and add a bunch of fruit: red apples, sliced thin, oranges, peaches pomegranite seeds are also nice
