Weekly Menu - 1/17

I know it's early but I just ordered peapod so I planned out my week with dinners:

Sun - Eggplant sautéed with olive oil & garlic & Warm Vegetable Salad from Giada (recipe below)
Mon - I have yoga so something easy for DH - Beef Stew in crockpot / rice / salad
Tues - Yoga class again so something easy - leftovers / salad
Wed - shrimp with broccoli & whole wheat pasta / salad
Thurs - pork chops (not sure how I am making them yet - maybe just bake them/ broccoli / salad
Fri - chef nite off!!

Warm Vegetable Salad, courtesy of Giada DiLaurentiis

2 whole red peppers
1 1/2 pound assorted red and white new potatoes
3/4 pounds green beans, trimmed and halved
1 bunch scallions, sliced
1/2 cup chopped fresh flat-leaf parsley
2 cloves garlic, minced
2 tablespoons chopped oregano leaves
1 lemon, zested and juiced
2 tablespoons white wine vinegar
1/2 cup extra-virgin olive oil
1 teaspoon salt
1/2 teaspoon freshly ground black pepper

Preheat the broiler. Place the red peppers on a foil lined baking sheet and place under the broiler. Turning every 2 to 3 minutes cook the peppers until the skin is blistered, about 8 to 9 minutes total. Place the blistered peppers in a plastic bag. Seal the bag and allow the peppers to sit for 10 minutes to allow the skin to separate and to let cool.
Meanwhile, bring a large pot of salted water to a boil over high heat. Add the potatoes and cook until tender, about 10 to 12 minutes. Remove the potatoes to a cutting board. Add the green beans to the pot. Cook the green beans until tender, about 3 minutes. Remove the green beans to a large bowl. Slice the potatoes in half while still warm and combine them with the green beans in the large bowl. Add the dressing at this point so the potatoes absorb the dressing. Add the scallions, parsley, and garlic
Remove the peppers from the plastic bag. Peel off the skin from the peppers. Slice the pepper flesh into wide strips and remove the seeds and veins. Place them in the bowl with the potatoes, and toss to combine.

Dressing :
In a small bowl combine the oregano, lemon juice and zest, and white wine vinegar. Whisk in the olive oil. Stir in the salt and pepper. Toss the warm vegetables with the herb vinaigrette. Serve immediately.

Sunday- spare ribs, fries and baked beans , corn bread.
Monday- going out to dinner
Tuesday- chicken parts seasoned w/ garlic powder, onion powder, black pepper, chicken dry rub, and I put healthy request cream of chicken on top, add some onions, salt free green beans and carrot slices and bake, it makes a gravy - and we have it over noodles.
Wednesday- salisbury steak, mashed potatoes, salad.
Thursday- crockpot sausage and peppers and onions over pasta or on rolls w/ melted mozzarella on top.
Friday- Probably pizza night.

Sunday stuffed mushrooms, leftovers, pigs in a blanket - maybe appetizer night
Monday penne alla vodka
Tuesday chicken in black bean sauce over rice with carrotos
Wednesday: maybe rachael ray turkey sweet potatoe pie and broccoli
Thursday: chicken burgers and broccoli and carrots
Friday: chinese or eat with parents
Saturday: split pea soup or pasta fagioli
eta: changed order meals and husbands turn to cook

I have a booooring week planned.

Sunday MIL

Monday: Steak, Baked Potato, Hayley's Burnt Broccoli

Tuesday: Taco Night

Wednesday: Sauteed Lemon Chicken with Sugar Snap Peas and Brown Rice.

Thursday: Whole Wheat Angel Hair with Summer Sauce and Turkey Sausage.

Friday: Ginger Soy Salmon, Edamame, Wasabi Mashed Potatoes.

Saturday: Roasted Chicken, Brussel Sprouts, Rice, Gravy.

Tuesday - Tilapia fish tacos, refried beans, and corn

Wednesday - Grilled chicken with broccoli and cauliflower

Friday - Leftovers

Saturday - Home alone so I might just order in

Since last week got really uprooted, I'm repeating meals I didn't get to.

Sun:Steak and Potatoes

Mon: Greek pitas with chicken/cous cous and cucumber-feta-dill salad

Tues: Burger Night with fries

Wed:Pasta with pesto

Thurs:Homemade pizza

Fri: Baked Ziti and Soup

Sat: ?

Mon: Flank steak, sweet potatoes, roasted parmesan cauliflower

Tuesday: Whole wheat linguine tossed with wilted spinach, sauteed mushrooms, walnuts and goat cheese.

Wed: Pasta e fagioli soup with kale, salad

Thurs: Asian lettuce wraps, stir fried broccoli

Friday: Coconut curry chicken and vegetables over brown rice

SUN - Roast beef, a potato bake from Rachel Ray (I just don 't know the name!!) string beans

MON - Taco Salads

TUES - Apple Chicken Sausage, Corn on cob, salad

I have to edit this cause my week is nuts! And DH wants chili!!!

WED - Chicken Pomodoro, basmati rice, broccoli

THUR - Chili w/cornbread

FRI - Sausage & spinach calzone
Side salad

I had to edit this week, cause DH wants chili!!!

Tonight: Leftover Beef Stroganoff I made in the crockpot yesterday over whole wheat egg noodles.

Tuesday: Chicken Breasts stuffed with Spinach, Sun Dried tomatoes and goat cheese. Salad on the side.

Wednesday: Rib Eyes with a fat free feta sauce, and sauteed spinach with garlic and oil

Thursday: Whole Wheat Farfalle with Shrimp and zucchini. Whole grain garlic bread.

Friday: Making Paella, having company.


Saturday: Thinking of making Sauerbraten, potato dumplings and red cabbage.


Sunday: No clue yet.

Tuesday- Homemade Pizza and salad

Wednesday- Beef Chili with Chili Cheese Bread

Chile-Cheese Bread
Savory Baking, by Mary Cech

2 cups all-purpose flour
2 teaspoons granulated sugar
1 Tablespoon baking powder
1 teaspoon freshly ground black pepper
1 teaspoon salt
4 ounces (1 cup) sharp cheddar cheese, shredded
1 cup whole milk
1/3 cup vegetable oil
1 egg
1 4-ounce can chopped green chiles
3 Tablespoons finely chopped jalapeno chile, veined and seeded
1/2 cup finely chopped red bell pepper
Preheat the oven to 375, and grease or spray an 8x3 inch loaf pan.

Sift together the flour, salt, pepper, sugar, and baking powder in a medium bowl. Add the cheese and gently toss and stir until it is evenly distributed throughout the mixture.

Whisk the milk, oil, egg, green chiles, jalapeno, and red bell pepper in another bowl. Make a well in the center of the flour and cheese mixture, and pour the milk mixture in the center. Briefily blend with a spatula, only until the dry ingredients are just incorporated.

Pour the batter into the prepared pan, and place in the oven. Bake until the top is golden-brown, and springs back when touched in the center, about 45-50 minutes. Cool on a rack for 10 minutes, then remove the bread from the pan and cool completely.


Thursday: Chicken Cutlets (breaded and panfried) with the Warm vegetable salad Kris01 posted from Giada and rice.

Friday- Eating out with a friend

Saturday- Roast Beef with mashed potatoes, mixed veggies/asparagus, dinner rolls

Sunday- will be watching Football somewhere

Thursday: On my own - DH has a meeting

Friday: Either chicken cutlets with rice, cheeseburgers, or grilled cheese with tomato and turkey bacon

Saturday: Dinner out

Sunday: Lasagna I think (maybe buffalo chicken lasagna)

Tues: pan seared flounder, roasted potatoes and carrots, sauteed spinach

Wed: going out with some hows

Thurs: pork chops with mustard cider gravy, mashed potatoes, sauteed green beans, corn

Fri: engagement party

Sat: birthday party

Sun: going to see As You Like It at BAM...,maybe out after that

Tues.- Cheese ravioli's with sauce, garlic bread, salad

Wed.- Pork tenderloin, brocolli, roasted red potatoes

Thurs.- Chicken soup with tubettini, sandwiches of some kind

Fri.- take out

Buffalo Chicken Lasagna

12 Whole Wheat Lasagna Noodles, uncooked

3 Cups Hunt’s Four Cheese Spaghetti Sauce
1 Cup Very Mild Buffalo Wing Sauce
1 1/2 Cups Water
15 oz. Nonfat Ricotta Cheese
1/2 Cup Egg Substitute
9 Slices 2% Pepperjack Cheese

Preheat the oven to 350 degrees. Spray skillet with nonstick cooking spray. Cook chicken over medium high heat for 4 minutes or until almost done. Stir in sauces and water. In a small bowl, combine ricotta cheese and egg substitute. Spray a 9X13 pan with nonstick cooking spray. Spread 1 Cup of sauce in the bottom of pan. Arrange 4 noodles over the sauce. Spread more sauce, then a layer of ricotta mixture. Add another layer of sauce, and repeat the whole process until you end with a layer of sauce. Cover and bake 70 minutes. Uncover and place cheese slices on top, then bake for another 15 minutes uncovered. Let stand 10-15 minutes before serving.
