hmm
i'm cooking for my parents and my in laws soon and was thinking of making chicken piccata (ina garten style). what do you think of risotto as a side? is it too rich?

I think it might be too rich...I would probably go with a lighter rice, maybe a rice pilaf or some long grain rice, and maybe some roasted asparagus or something like that

Risotto (the way I make it) is pretty heavy and I think it might detract from the buttery piccata sauce. I usually reserve risotto for grilled steak or a plainer protein selection.
I usually do a light lemon orzo or angel hair pasta or rice. Cook the pasta or rice in chicken broth - I usually add a little chicken base for added flavor. Then stir in a little lemon zest for fragrance. Chop a little parsley and even take a wedge of lemon and squeeze it on there for a little extra lemon flavor and serve with the piccata. You can drag the rice or pasta through the piccata sauce too!
