How do you sautee your vegetables?

Do you use butter or olive oil and garlic?

i don't normally sautee my veggies, but when i do, i use olive oil and salt and pepper. i usually steam or roast them. mmm! love my veggies!

eta: i've actually seen some cooks on tv (not anymore though thanks to cablevision!!!!) sautee using one part butter one part olive oil. i think ina garten explained that the butter gives it some flavor, and the olive oil helps it do something else that I can't remember now!

Depends on what I'm sauteeing and what I'm serving it with. I will do olive oil and butter or olive oil or garlic.

using oil with butter raises the smoke point so you can heat it higher and cook it longer.

that being said, I don't like the taste of butter on most veggies, so I just use olive oil, usually with fresh crushed garlic.

Butter is a MUST with onions. Sauteed with butter, salt, pepper a dash of sugar..

yum.

in a non-stick pan with olive oil, garlic, coarse salt and cracked pepper with a little red pepper flakes.
