Delish artichoke dip anyone?????

I've never made it before, but would love to serve it hot tomorrow for my NYE get together. TIA!

A jar of artichokes drained and chop up. Pat a little with a paper towel to get some of the oil out. In a bowl mix artichokes, some Mayo and Parmesan cheese. Put in the microwave for a minute and serve with crackers or pita chips. It is so easy and good!

Lisa's Artichoke Cheese Dip
8 oz. shredded Mozzarella
8 oz. shredded Monterrey Jack
1/2 cup Hellman's mayonnaise
1 bag defrosted artichoke hearts
4 oz. shredded mild Cheddar

Mix together above ingredients (cut hearts into small pieces). Bake in a covered casserole dish, at 350 degrees, about 25 minutes until melted and lightly browned.

How many would this generally serve, about 4? Sounds yummy!

I have used it to serve anywhere from 8-12 people. It would depend upon if I am serving it with other apps or not. I serve it with pita chips, and veggies. It always goes and frankly if I have left overs, it is fine, cause I will microwave it later. It is really yummy.

I make this all the time and get rave reviews! I add some paprika and parsley and top it with extra parm/paprika/parsley. I bake it for about 15 - 30 minutes until it gets bubbly and slightly brown on top. AMAZING! I serve with fresh pita or fresh cooked artichokes.

I make a very similar recipe in the oven but it also calls for some lemon juice. It's a hit every time. I also add parsley in the recipe. So yummy!
