I have some baby yukon gold potatoes
What should I do with them lol? I want to serve them with london broil.

I use them for roasted potatoes.
Cut the big ones in 1/2. Coat with olive oil, salt, pepper and if you have any... rosemary or thyme. DH loves it with onions and I add fresh, minced garlic sometimes too.

I do the same. Don't crowd the roasting pan or they don't get crispy.
I also love to mash them. You don't need gravy - you can load them up. Mash them with garlic or throw it a handful of crumbled bacon, grated cheese and some sour cream for baked potato style!
