Christmas Cookies - When and what?
When do you start making your Christmas cookies? I want to give them out to people Christmas weekend, but I'm not going to have a ton of time that week to bake and don't know how long they'll stay fresh for.
Also, what kinds of cookies is everyone making? Last year I made sugar cookies, peppermint bark, and chocolate coconut snowballs. I'm looking for something new to add this year.

I usually take the entire Sunday of the weekend before Christmas to bake. This year I am doing jam thumbprints, spritz cookies, gingerbread men and candy cane cookies (my fave!).

I'm making raspberry thumbprints, italian cookies, peanut butter blossoms, double chocolate chip cookies, and white chocolate-cranberry oatmeal cookies. I'm going bake all saturday and sunday. Last year I had to bake about a week or so before and the cookies still tasted great. Most cookies will freeze well if they are in a good container.

I usually try to do one or two after work during the week leading up, and do the bulk the Sunday before. I make the dough for anything that can be refrigerated in advance then they can just be baked off closer (so the freshness isn’t as much of an issue). We make:
--Butter cookie press cookies (makes a ton!) --Sugar cut out cookies (this dough can be made in advance) --Snowball kisses --Nut cups (like pecan tassies) --Ice Box cookies (family recipe, brown sugar cookie w/ walnuts—slice and bake so this dough gets made in advance too) --Chocolate white choc chip cookies --Oatmeal cookies --chocolate & white choc covered pretzels
I think I want to add a gingerbread cookie this year too. Normally we do choc chip too but I got DH to agree to switch that to oatmeal since I didn’t get to those last year and my brother was disappointed.
I LOVE cookies!

I plan on doing them the Saturday or Sunday before Christmas (so next weekend).
My 2.5 year old is going to help!
My plan is: - chocolate crinkles b/c everyone loves them - sugar roll-outs with different color frostings for DD to help me decorate - possibly gingerbread men, though probably not enough time - possibly the spritz cookies so DD can help with those.
So, at least 2 kids, hopefully 3.

I'm making: Amaretto Chunk Cookies Chocolate Chip Cookies Snickerdoodles Anisette Toast Lemon something (anyone have a recipe???)
I usually make them on the 23rd at night and the 24th during the day. I'm off from work so I like to bake that day.

Last year I bought two cookie rubbermaids from Bed, Bath and Beyond and froze them for a week with wax paper. Ive also used just plain old tupperware/rubbermaids that I had.

Wow this is a great thread! i am having the same questions but just posted about it lol
But this thread has given me ideas about what other cookies to make. I didn't even think about refrigerating the dough... that makes things a little easier

-chocolate mint cookies -sugar cookies with almond icing -chewy coconut cookies (I'll prrobably drizzle some with chocolate)

I usually mix the dough in advance and freeze it and then bake them the weekend before Christmas. Then I just store the cooled cookies in an air tight container til then.

If you're doing any slice-and-bake or cookies that you'd roll out and cut with cutters you can probably freeze the dough beforehand also.

i made oatmeal with cranberries and white chocolate chips... and i made regular chocolate chip cookies with peppermint extract
then i put them in ziplock bags to keep them fresh- granted, i made cookies on saturday and brought them to work today, and they were still fresh and soft enough, so id guess maybe next sunday would be good?

I heard if you put them in a tupperware with a few pieces of bread they stay fresh....My mom actually tried this and it worked!
Just make sure u change the bread slices when they dry out. adding the bread allows the cookies to stay moister longer.

This year I am doing:
chocolate chip sugar cookies (probably shapes and let DS decorate) chocolate covered oreos (always good to throw in the mix) thumbprint cookies rainbow cookies
last year I did coconut macaroons and 7-layer magic bars but I might leave those out since I am doing rainbow cookies this year.
