Anyone have a homemade ravioli recipe?
I'm thinking instead of lasagna, maybe I'll do that tonight.

I'll give you both just in case:
Okay so for the fresh pasta -
3 cups all purpose flour 4 large eggs 1 tablespoon kosher salt 1 tablespoon olive oil
-Place flour in food processor. -In small bowl, lightly beat eggs then add salt and olive oil. Stir to combine. -Add egg mixture to food processor and pulse to combine (scrape down sides as needed). -Let machine run until liquid is evenly distributed (takes about 1 minute). It's finished when the dough sticks together if you pinch it between your fingers. -Turn out onto lightly floured surface, gather into ball and knead until smooth. -Cover with plastic wrap and let rest for 30 minutes.
While it's resting you can make the filling.
1/2 cup ricotta 1/4 cup grated parmesan 2 tbsp diced Italian parlsey 1 eggs an egg wash of 1 egg beaten with 1 tbsp of water
-In a bowl, mix together the ricotta, parmesan, parsley, and one egg. Season with salt and pepper and mix well. -Divide the pasta dough into four pieces. -Roll out one piece of pasta dough to the thinnest setting. Place 1 tsp of ricotta mixture about 1 inch from the corner of the dough. Repeat with the remaining mixture until no room is left on the dough. Each drop should be approximately 1 inch from any other. Spread the egg wash in lines between the filling mixture. Roll out another piece of dough to the thinnest setting and place over top of the first piece of dough. Press down between the filling and try to remove any air bubbles. Cut the ravioli with a pastry cutter or pizza cutter. Make sure all edges are sealed on the ravioli. Repeat with the remaining pasta dough and ricotta mixture. -Cook the ravioli in salted boiling water for approximately 2 minutes after they begin to float.
