I JUST made one the other night. I have one that makes a HUGE quantity, but here's another that makes just enough.
I made some variations to this. First, I didn't use lime juice at all. I also found the soy sauce to be too salty, so I cut some of it down with hot water. Instead of sriracha sauce or red pepper, I used a quarter tsp. of chili oil.
I still garnished with scallions, but I did carrot peelings instead of sesame seeds.
It was delicious! I served it with a soup and salad.
INGREDIENTS
8 oz cooked whole wheat spaghetti, drained 4 Tbsp creamy peanut butter 2 Tbsp rice wine vinegar 2 Tbsp fresh lime juice 1/4 Cup tamari or soy sauce 1 Tbsp sesame oil Sriracha sauce, or crushed red pepper flakes (optional, and to taste) Chopped green onions Toasted sesame seeds
DIRECTIONS
In a large bowl, whisk together the peanut butter, vinegar, lime juice, tamari, sesame oil and sriracha sauce.
Toss the spaghetti with the sauce while it is still warm.
Serve room temperature, or cold. Garnish with the green onions and toasted sesame seeds.
