Will they stay okay? Anything special I need to consisder (ie storing a certain way in the fridge)? Will they dry out or anything?
They are boneless chicken cutlets.
Thanks!

You know.. I don't think I would. The wet would have too much time to soak through and make the 'breading' soggy.

I've done it when I had a LARGE quantity to do to save time. It worked fine.

I have done it plenty of time and have never had a problem with the bredding being soggy, etc.

I never thought to do this, but if people say it works then why not!

I just did it last week and boy did it save me so much time the next day. It didn't come out soggy at all. After I fried the chicken I would put them on a cooling rack over the a cookie sheet covered in paper and the chicken stayed crispy.

THanks everyone! I wanted to follow up and say that I did in fact bread them the night before and everything was great. Saved so much time when making 20 lbs of chicken.
