Crazy-Creamy Crab-Stuffed Mushrooms


(Entire recipe: 135 calories, 3g fat, 975mg sodium, 12g carbs, 2g fiber, 4g sugars, 16g protein = 3 Points)



These make both an awesome appetizer and a hot 'n cheesy snack!



Ingredients:
12 small-to-medium-sized (1 - 2" wide) brown mushroom caps (stems removed)

2 oz. drained white crabmeat

2 tbsp. celery; minced

2 tbsp. red pepper; minced

1 wedge The Laughing Cow Light Cheese (any Light flavor)

1 tbsp. fat-free sour cream

1 tbsp. fat-free cream cheese

2 tsp. fat-free cheese flavor sprinkles (like the ones by Molly McButter)



Directions:

Preheat oven to 375 degrees. Wipe mushrooms clean with a damp paper towel and then dry them. Place with the rounded sides down on a baking dish sprayed lightly with nonstick spray. Combine all other ingredients and stir until well mixed. Evenly distribute crab mixture among the mushroom caps. Place in the oven for 10 - 12 minutes, until hot. Enjoy the creamy, crab-tastic goodness! Makes 12.

Entree:

WW Turkey Roast with Hoisin

Roasted Turkey Breast

3 points per 3 oz serving (number of servings varies depending on size of turkey breast)

1 skinless boneless turkey breast
1/2 cup hoisin sauce
salt and pepper
1 onion, sliced into thin wedges

Preheat oven to 400 degrees. Place sliced onions in baking dish and top with the seasoned turkey breast. Pour hoisin sauce over breast and around baking dish. Bake for 45 minutes to 1 hour, basting with the hoisin sauce around pan until internal temp reaches 165 degrees. Let rest for 10 minutes, then slice and serve.

Sautéed Brussels Sprouts
Gina's Weight Watcher Recipes
Servings: 4 • Size: about 1/2 cup • Calories: 82 • Points: 1 ww point


•1 lb Brussels Sprouts (outer leaves removed and washed)
•1 tbsp extra virgin olive oil
•2 cloves garlic, minced
•1 shallot, minced
•kosher salt and fresh ground pepper
Finely shred the brussels sprouts after thoroughly washing. In a sauté pan, heat olive oil. Add shallots and sauté about 2 minutes, add garlic and saute until golden. Add brussels sprouts, salt and pepper and sauté on medium-low for about 4-5 minutes.


Cauliflower Fritters
This is a delicious way to prepare cauliflower. Similar to the taste of a potato pancake. Your kids will love them! Makes approx 24 fritters depending on size of cauliflower.

Servings: makes 24 • Size: 2 fritters 4 oz • Time: 25 minutes • Calories: 137 • Points: 2.5


•1 head cauliflower (4 cups)

•2 cloves garlic, crushed
•1 cup whole wheat flour
•2 eggs
•1/2 cup Pecorino Romano
•1/4 cup parsley, finely chopped
•1/4 cup hot water

•salt and pepper
•1/4 cup olive oil
Steam cauliflower, then chop into small pieces. In a large bowl, combine cauliflower, flour, garlic, eggs, grated cheese, parsley, salt and pepper. Add water so that batter becomes slightly more dense than pancake batter.

On medium-low heat, add 1 tbsp of oil in a 10 inch skillet coating bottom of the pan. Use a 1/4 cup measuring cup to form fritters. You can fit 4 fritters at a time. Cook until golden brown, turn and cook another few minutes. Add a little more oil to the pan, and repeat with the remaining batter.

Sooo it was good-but I made the fritters too thick and they could use more salt. The turkey came out great, the onions were great. The sprouts eh...not sure if I undercooked them or what...The mushrooms were awesome. I would probably do them again with panko over for some crunch-the whole recipe is only 3 points so that would be negligible
