Tuscan Chicken?
How do you make it? I have seen a few of you post on your weekly menus. I have a Rachel Ray recipe but it uses dark meat chicken as well as white meat. It also serves 10!!!

Well.. mine is probably not 'authentic' Tuscan chicken. I just call it that because I made it from a recipe that was called Tuscan Chicken!
I marinate cutlets in a mixture of lemon, rosemary, lots of crushed garlic and Olive oil for at least an hour.
Then I dredge it in seasoned flour and fry them in EVOO until light gold on each side. Put chicken in baking dish.
Remove, add a little butter and sliced baby bella mushrooms. When mushrooms have softened, put them in dish with chicken.
Deglaze pan with chicken stock and then whisk in some seasoned flour until thick enough to coat spoon.
Pour over chicken and mushrooms. Toss a little Italian cheese on chicken and mushrooms and bake for about 10 minutes until cheese is melted and chicken is cooked through.
Garnish with rosemary & lemon wedges and serve with linguine or rice.
ETA: I just realized I wrote "at least an hour" - I meant NO MORE than an hour. I don't know if it would make a material difference to do it longer.. but I don't like the citric acid to cook the chicken for that long.
