Pumpkin Pie
My first ever pumpkin pie from scratch is in the oven....I will let you know if it was worth the effort!
P.S. I did cheat and use a frozen crust :) but the filling was a fresh pumpkin that I roasted and pureed.

I wish I made it from scratch like you! I'm jealous I wouldn't even know how to make it from a real pumpkin.
My family thinks my "homemade" pumkin pie is great, but it's just Libby's poured into a frozen crust! What they don't know won't hurt them.
I'm such a fraud LOL.

DH had 2 huge pieces last night - he never eats sweets and therefore I eat entire batches of cookies, brownies, etc.
Here is the recipe:
SOOOO Easy.
First I pulled and cleaned out the seeds from the pumpkin (roasted them in olive oil and salt).
I cut the pumpkin into big pieces - maybe 4 or 5 for the entire pumpkin and roasted for about 40 mins at 400 (could cook shorter time if you cut into smaller pieces).
Pie recipe: 1 cup white sugar 1/2 teaspoon salt 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon ginger 1/2 teaspoon ground all spice 1/2 teaspoon ground cloves 1 1/2 cups pumpkin puree (I used a food pro) 1 2/3 cups evaporated milk 2 eggs 1 9 inch pie crust (I used a frozed deep dish)
Note: this recipe makes a lot of filling, it totally filled the deep dish frozen crust
preheat oven to 425.
combine all ingredients and blend until smooth.
Bake at 425 for 15 mins then lower the temp to 350 and bake for 40 mins until pie is firm (mine took an hour)
Enjoy!!!

This may be a really stupid question, but when you say you cut the pumpkin into 4-5 pieces, do you mean the whole pumpkin, like the part you would paint too, or just cut that part off and used the inside of it?
