Need Pasta Fagoli Recipe

This is my favorite recipe; very healthy!

Pasta Fagioli

5 servings • Total Time: 30 minutes • Points: 6.4 ww points

1 tbs olive oil
1/2 onion
3 cloves garlic, chopped
1 celery stalk, chopped
1 carrot, finely chopped
1 15 oz can cannellini beans
15 oz can tomato sauce or crushed tomatoes
1 large bay leaf
1 tbsp basil
1 tbsp parsley
1 tsp oregano
2 cans fat free chicken broth
2 cups water
salt and pepper to taste
1-1/2 cups Ditalini pasta or other small pasta
Grated Parmigiano or Romano

In a deep pot, saute onion and garlic in olive oil over medium heat.
Blend the can of beans with one can water in electric blender until almost smooth.

Add blended beans to pan then add the can of tomato sauce, celery, chicken broth, basil, bay leaf, parsley, oregano, salt and pepper. Add 1 cup water and bring to slow boil. Let simmer for 20 minutes stirring occasionally. Add pasta and cook uncovered until pasta is al dente, according to pasta directions.
Ladle soup into bowls and top with grated cheese (extra pts).

I add one can of cannelini beans or one can of red kidney beans (?whatever AI have in the house)

1 can of water

Salt and pepper (i add extra pepper)

mix with a pound of elbow or dittalinni pasta and wala...a meal in minutes.

this is the way my mother makes it and i never thought it was true pasta fagoli. my sister's italian mother n law makes it very differently and they taste completely different.

ours is more of thicker red sauce
we make it with sausage ,


get a pkg of the spiral skinny sausage , you can get either pork or chicken. I like the porck one for the pasta fagoli..

you can either bake it broil it fry it however you like...

in the meantime , fry up a med size onion in some evoo.. after thats transulent add the sausage ( cut up the sausage into bit size pieces..

let that sautee for a few min ,
next add 2 cans of tomato sauce to that.. let it cook as you would pasta sauce... right before its done add the starined can or kidney beans.. & then ditalini..

omg my fav winter ,meal

too funny....my is 100% italian and makes it the way I posted, but the first time I saw it made with veggies and with a red broth I asked her about it and she gave me the whole...depending on what part of italy you re from blah blah blah....us crazy italians have our own way of making everything. i make it this way too, but i add some cut up bacon to the pan when im starting out. Gives the pasta Fagoli a whole other flavor! Yum!!

Got this recipe from a friend of mine(haven't made it yet though):

1 lb. ditalini, or farfalle (bowties), work best

2 cans vegetarian beans (like pork and beans, but without the pork); I don't like the consistency of canoli beans in this recipe. They don't cook down enough for my taste, and the vegetarian version tastes good without the added calories and sodium the pork version contains, yet they still provide a good source of fiber per serving.)

Ingredients
1 large onion - cut in half, and then sliced thin

garlic powder or fresh garlic, amount to taste

1 can artichoke hearts, sliced in half, with the tops cut off if they are hard; use the soft, bottom part in the recipe
black pepper, to taste

pinch of salt, if you use salt, I usually don't

low sodium chicken broth powder, 1 tsp., if you have it, if not, this is still a good dish without it

fresh pecorino romano cheese for grating (according to your taste)

hot pepper sauce or pepper flakes (according to your taste)

Directions
olive oil - small amount, but enough to coat the bottom of the pan (and then some for a really good dish)

Put a pot of water on for the macaroni. While it's coming to a boil:

In large sauce pan, heat oil, add onions, garlic if cloves are used, and artichoke hearts.

Cook on medium, stirring occasionally, until onions are translucent.

Add the cans of beans, including their liquid, and the garlic, if powder is used.

Add black pepper (to taste), salt (if used), and chicken broth powder (if you have it).

Stir together, cover, cook on medium/low heat, stirring occasionally, so as not to burn it; lower the flame if it sticks.

Cook the macaroni to taste, drain (but reserve a cup of the macaroni water), add the bean mixture to the cooked macaroni.

Add the reserved macaroni water to the beans and macaroni, stir together well.

Dish up a plate for each diner; they can add hot pepper sauce or pepper flakes if they like, and grate some fresh pecorino romano cheese on top if they like.

Really delicious and nutritious!

My recipe is a family one too adn ridiculously simple:

Boil the pasta (little shells or elbows) with a boullion (sp?) cube

when they are just about done, drain most of the water (leave a little less than half) throw in a can of beans (we usually use kidney) and some leftover sauce we always have in the freezer. Just enough to give the water a red tint and some flavor.


All done! Serve with fresh bread and lots of permasean cheese!
