chicken parm for the masses need recipe
so i know how to cook it for a few ppl but i want to make it for about 20ppl and after checking with caters i refuse to pay $90 !!!

hey you.
when I make it for a lot of people, I don't bread/fry the chicken.
I marinate the chicken cutlets in chopped garlic, olive oil, oregano, and a bit of white wine.
then I bake it til it's mostly cooked through (about 10-15 minutes)
I then top each piece with sauce and cheese, and put it back in the oven until cheese is melted (and even slightly browned...I love how that tastes)
it's so much easier and less labor intensive than frying up each piece. and I haven't had anyone turn down a piece yet.

thanks...silly question what type of tray do you use to cook. do you use one big one or two small ones so they don't overlap.

I make chicken parm alot, and i dont fry the cutlets, its pretty easy
I dip the chicken breasts in canola oil, then i use progresso panko bread crumbs, you can add parmesean cheese to the bread crumbs if you like
Then i lay them out in the trays, I bake at 350 for 10 minutes, then i flip them, bake another 10 minutes
I take the trays out, top with sauce (you can use any sauce) then layer with mozzarella and put back for another 10 minutes
And your done! and its delish!

I do this too... (sorta)
I dip the cutlets in beaten egg, then panko or breadcrumbs mixed with freshly grated parm.
I broil them for 4 minutes or so on each side until they're golden brown... then spread your favorite sauce on the bottom of a tray.... put chicken on top... top with more sauce.... and a generous amount of shredded mozz. and bake at 450 for 15-20 minutes until the cheese is bubbly!

2 small trays. especially if you are using racks/sternos.

I'm going against the trend here...
I'd still fry the cutlets, but I'd do it the night before. Day of the party, I'd let them return to room temp. before adding cheese and sauce. I'd also make the sauce ahead of time (even if you freeze and defrost it). For 20 people, I'd have 20-25 cutlets.

I buy the huge pack of chicken cutlets froom costco, and i slice them in half each. I do all the prepping the night before for a large party. Made them for my DD's first bday and they were a big! I bread and fry them and drain on paper towels. Then when everything is breaded and fried, i take two half trays and i put sauce on bottom of trays. Put a layer of cutlets and then i put grated mozzarella on top of the later and chicken cutlets again and repeat for 2 more layes, ending with sauce and mozzarella on top. I leave the trays overnight in the fridge till the day of party. I put the trays in the oven about an hour before we plan on eating. Good luck! I use half trays that i either buy at Costco of even dollar tree sells them.
