stupid question, but what is the difference? They both seem to have the same nutritional value...thanks

I *THINK* that EV designates it as a pure first press and non-EV means it can be a later press of the olives or blended from several batches.
But from a practical standpoint it is the taste and the smell that create a difference in my kitchen. I can use a regular olive oil for frying or whatnot - but my salads and breads use ONLY Extra Virgin. It SMELLS like olives. It has a TASTE - not just an oily kind of consistancy. It has a little bitterness and a bit of a bite. It's just.. better.

Depends. I prefer to use EVOO in most instances - but for general frying where I am going to use a 'lot' of oil - I'll just use my big jug of the regular stuff. The GOOD stuff is just too expensive to go 'glug glug glug' with!
If I plan to deglaze and make a sauce or gravy in the same pan I will use EVOO.

IMO , evoo is used for salads, & dipping & some cooking. I wouldn tnecessary fry meats & poylty in it as it tends to get bitter when fried, again IMO...
I use vegtable or whathave you to fry cutlets & then veggies & such evoo , hth

Yes! You can't deep fry with EVOO or it gets a weird taste. Good point!
But for Francaise or Milanese or any dish where there is only a little olive oil I use it.

ITA! I would use Canola for frying though.
