Zucchini Brownies

Anyone ever made these? I was all set to make Zucchini Bread last night, stopped on the way home to get zucchini, got home, grated the zucchini, only to open the fridge and find that DH had used the rest of the eggs. Stupid me, should have checked before grating all the zucchini! So then I went on a rampage web searching trying to find recipes without eggs…which there are many, but all required something else I didn’t have (applesauce, yogurt, etc.). The only dessert/bread type recipe I could find that I had all the ingredients for was zucchini brownies, so I made them! They actually turned out pretty good. I think if I had known I was using the zucchini for brownies I would have grated it smaller so it wouldn’t be noticeable at all…as it is it’s not too noticeable, but occasionally you see it. I added chocolate chips and omitted the nuts but if I did it again I would probably add more choc chips. I also omitted the frosting b/c I don’t like frosting on my brownies.

Has anyone else ever made these? Just curious how they were received! (DH was quite incredulous and has yet to taste them….he said “you’re just trying to sneak vegetables into my desserts!”)

I made the black bean brownies once, they didn't go over too big with the family - my BIL still asks for them (jokingly)Chat Icon

Amazingly they went over pretty well! SIL (who is 20) was a little grossed out by the zucchini but it didn't stop her from eating them! They really do taste more like devil's food cake and are a little messy, but still good. Grandma and MIL and FIL all like them a lot and couldn't believe there was zucchini in them!
