So last night I sauteed shrimp, onions, peppers and some fresh garlic with some wine, salt, pepper and some dried basil. It came out ok but I felt like it was missing something. What would you have added to give it a little more flavor?

I might have marinated the shrimp in olive oil and fresh garlic before sauteeing it.. just to soak up the flavor. I also would have used the shrimp skins to make a quick stock - )shrimp peels, chicken broth, roughly cut onion, a carrot, some thyme in a pot.. bring it to a boil, reduce heat and simmer down about 10-15 minutes - use strainer to remove onions and other bits .. liquid is stock for recipes).

Sautee the shrimp until just barely starting to turn pink, remove. Add veggies, sautee until cooked - but still crisp - remove. Add a pat of butter and a little corn starch or wondra, whisk in the stock until a sauce forms. Add in your wine and simmer until sauce is reduced and coats the back of a spoon. Add veggies and shrimp back in and then use FRESH basil torn up. Cook until shrimp is pink throughout but NOT bent over and overcooked - serve over orzo or rice.

OR.. marinate all of the stuff in a baggie with garlic and lemon then skewer it and grill it.

I really prefer fresh basil to dried. It makes a tremendous difference.

Fresh basil would have made a world of difference imo, or more garlic (never too much garlic)

fresh basil, oregano, red pepper flakes.

it's hard to say without tasting it.

if I was feeling intrepid, I would try Jeannie's way...but she rocks. I don't. Chat Icon

I would have seasoned and cooked the shrimp in the garlic and olive oil first too, so the shrimp gets that extra flavor.

then removed them to sautee the veggies in the garlic and oil as well, then invited them all back to the party before adding the liquid (wine or stock ala Jeannie)

I would add butter, olive oil, parsley and oregano... Essentially scampi with peppers and onions.
