what do you put in your chili??

I'm making chili tonight and I want to do some extra add ins besides beans and tomatoes. Is there anything else you put in your chili?

I sauté onions and green peppers and then add it when I brown the meat. I also use beer as my liquid, gives it a really nice flavor when you let is simmer for a while.

I chop an entire medium onion, half of it added to the meat while cooking and the other half while it simmer.

I use red and green peppers, and onion. Sometimes I add salsa.

I usually add shredded carrots in addition to green and red peppers and onions. Sometimes I also add corn.

The carrots help sweeten the sauce.

Top with salsa, cheddar cheese, and/or sour cream. YUM

I saute onion and garlic before adding the meat and browning it. I use black beans with the kidney beans too. But the real fun comes with the toppings.. I have cooked corn kernels, diced raw onion, cilantro, cheese, sour cream and guac to add to it. And yellow rice of COURSE.

I dice up bacon & saute it while the meat is browing.

everything's better with bacon!

a can of diced tomatoes

besides onions, garlic, beans, meat, tomato sauce, and a host of spices (cumin, 3 kinds of chili powder, salt, pepper etc) I shred sharp cheddar cheese and add it to the chili right before serving so it completely melts in...

I usually serve with rice and/or corn bread.

A pinch of cinammon adds a fun flavor.. makes it tatse a bit like Cincinatti chili..
