4th of July Appetizers

So DH and I are hosting a 4th of July party at our house with my parents and inlaws.

What is a good appetizer to make?

Cold Spinach Dip in the bread bowl:

I love the Spinach Dip you can get from the KNORR'S mix they sell at the Supermarket. Knorr's comes in a yellow bag - it is a mix that is sometimes found on the salad dressing aisle... Then, other times, it is with soups and stuff. But, on the back of the package is the recipe for the spinach dip. I buy that, a round loaf of bread. I gut the bread (cut a circle in it) and then use the bread bowl to hold the dip.

You buy spinach, scallions, mayo, sour cream (it will tell you how much on the back of the Knorr's package), buy the Knorr's... follow the directions (drain the spinach and chop the scallions) and mix it all together -- it is so good! Chill for about an hour and then serve. I let it chill in a bowl and then scoop it into the bread bowl right before serving. You can use the guts from the bread for dipping along with tostitos and crackers. It is super easy and yum!


Creamy Layered BLT Dip:

1 Container of Sour Cream
1/2 teasoon of onion powder
1 package ready-make bacon
1/2 cup shredded cheddar cheese
2 medium tomatoes, chopped
1 cup shredded lettuce

-mix sour cream and onion powder, spoon into a shallow dish. Cut the bacon and then sprinkle on top of sour cream in dish. Then, do the same with cheese, lettuce, and tomato. Serve with Ritz crackers!


Chili Dip:

1 Container or Chili WITHOUT beans
1 Container of Philly Cream Cheese
1 Big bag o' shredded cheddar cheese

Spoon the Cream Cheese into a microwave dish (that you are also going to serve it in!!), Make a nice, thick 1.5 - 2 inch layer of it. Then, spoon the chili on top of that, and then top with a thick layer of the shredded cheddar. Nuke it for about 4 minutes. Check on it - it should be piping hot and all the cheese should be melted. Make sure you cover with a paper towel for splatter effect. It is DELICIOUS. Serve with chips and crackers to dip.


Sweet N Spicy Party Nuts:

1 1/2 cups sugar, divided
4 cups warm water
2 cups pecan halves
2 cups whole almonds
1/4 cup butter or marg, melted
2 tablespoons chili powder
2 teaspoons lime zest
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon ground red pepper

Combine 1 cup sugar and 4 cups warm water in a large bowl, stirring until sugar dissolves. Add pecans and almonds to liquid mixture; let stand 10 minutes. Drain well; pat nuts dry with paper towels and return to bowl. Pour butter over nut mixture, stirring to coat.

Stir together remaining 1/2 cup sugar, chili powder and next 4 ingredients; pour over nut mixture, tossing to coat. Spread in a single layer on a lightly greased baking sheet.

Bake at 350 degrees for 30-35 minutes. stirring occasionally. Arrange in a single layer on waxed paper to cool. Store in an airtight container up to 1 week or freeze up to 1 month (so, this is something you can do in advance if you want!).


Cucumber Ranch Dip:

1 (8oz) package of cream cheese, softened.
1/2 cup ranch dressing
1 medium cucumber, peeled, seeded, and chopped.
2 tablespoons minced onion
1 1/2 teaspoons dried dill weed

Beat cream cheese and ranch dressing at medium speed with an electric mixer until smooth.

Stir in cucumber, onion, and dill weed. Cover and chill 1 hour.

Serve with cut raw veggies


Pomegranate Margaritas

3 cups white tequila
2 cups cranberry juice
1 cup pomegranate juice
3/4 cup Triple Sec
1 (10 oz) can frozen margarita mix, thawed.
1 (12 oz) can frozen cranberry juice concentrate, thawed and undiluted.
1 (12 oz) can frozen limeade concentrate, thawed and undiluted
Light Corn Syrup
Coarse Sparkling Sugar

Combine 6 cups water and first 7 ingredients in a very large bowl. Cover and freeze at least 24 hours or until slushy.

Pour a small amount of corn syrup onto one plate and coarse the sugar onto another. Dip rims of margarita glasses in corn syrup, then sugar. Pour margaritas into prepared glasses.


Summer Strawberry Salad:

Baby Spinach
Strawberries
1.2 cup sugar
2 tbsp. sesame seeds
1 tbsp. poppy seeds
1 tsp. paprika
1/2 tsp. worcestershire sauce
1/2 cup olive oil
1/4 cup vinegar
2 tsp. minced onion

Mix together everything except spinach and strawberries. Mix it well and at the last moment, pour the dressing over washed spinach and sliced strawberries. Enjoy!


I think all of that and a big shrimp cocktail platter along with assorted chips should be great. I mean, wings and mozzarella sticks are a great last minute and easy thing to add to it if you need to - depends on how many people you are having.

Take some black olives and mix it with mandarin oranges. In another bowl some Hummus with roasted pine nuts. cut up some bread (italian). The combination of the hummus spread and olines w. oranges taste so yummy. I had this at a dinner in my friends house.
