What can I do with Shrimp tonight?

I have shrimp and I have Asian style rice.. I need something simple that I can make.. I know I can saute them in garlic and pepper to make them spicy, but I feel like I should do something else to them more flavorful..

Make a marinade by putting basil, unsweetened coconut milk, garlic, lime juice, ginger, peanut butter, soy sauce, brown sugar and Nam pla or Hoisin in the processor until smooth and thin. Marinate the shrimp for at least an hour. Saute shrimp in a wok for 5 minutes until pink. Throw in some snow peas, water chestnuts and peppers and stir fry in some of the remaining marinade. Thicken with a little corn starch, remove from heat and add shrimp back in before serving over rice.

You can take out the coconut milk, basil, lime and peanut butter if you want to go less Thai.

I usually make a shrimp and rice dish:
-cook rice according to box and set aside. (I usually use one packet of the boil-in-a-bag and make in it the microwave)
-sautee the shrimp in a skillet in olive oil and garlic. I usually cut up some onions for this sautee too. Cook shrimp till pink and remove from skillet.
-In same skillet add the cooked rice and 1/2 cup chicken broth and 1/4 cup white wine.....turn heat up till liquid is ALMOST gone. (eyeball it - you can add more broth or wine if you'd like)
- add cooked shrimp to rice and stir. add grated parmesan cheese and stir again...let simmer for a few minute...and enjoy.

I ended up mixing Italian dressing, soy sauce, ginger and honey and sauteing the shrimp and making thai spiced rice with it.. It came out super yummy and was sooo quick to make!!!
