In need of a good roasted chicken receipe
I am looking for a flavorful, moist roasted chicken receipe- does anyone have one to share? TIA!

Here is an older thread with my recipe that I use all the time and another one that I make every now and then.
The Emeril recipe leaves a ton of oil in the bottom of the pan, so I can't make gravy with it. That is the only reason I stick to my recipe most of the time. Emerils is good though.

I responded in that bumped thread! I will tell you that brining the chicken makes such a huge difference! Even if it is just for a few hours. Even the gravy tastes that much better.
If you are going roasted WITHOUT gravy, you can do the beer in the butt chicken which is really good and tasty. Just loosen the skin and season over and under it with salt, pepper, paprika, herbes de Provence and granulated garlic.. or whatever your house seasoning is. Stick a tall boy can in the rump of the chicken and put it in a shallow flame safe dish on the barbecue. Cook until juices run clear.. delicious!

i flavor mine with s&p , garlic powder, thyme, a little goya or essence and then i stick a few thyme lives in the cavity of the chix and i cut up a lemon and put a few slices in the cavity also. Comes out so moist and FANTASTIC!!!!!!!
