Sofrito!
My co-worker's grandma made some and she gave me some.
I marinated a flank steak for 3 days (don't ask) in it and grilled it last night.
It's off the charts yummy. I have no idea how to make it but it's onions, garlic, peppers..spices and some other stuff and is green. It's so yummy!

I also love that EVERYONE has their own recipe for it and EVERYONE thinks theirs is the best one. The other green stuff is probably parsley.. parsley, tomatos, onions and garlic are usually the absolute constants in the majority of the Sofrito recipes people have passed onto me.
You can buy it canned in the grocery store too!
My most basic recipe for red sofrito is:
Fry 1lb of chorizo and remove from pan. Add a bit olive oil and a LOT of peeled, minced garlic (I use at least a whole head). Add a full (unpeeled) head of garlic to the pan and leave it there. Add 2 diced spanish onions and a couple of diced sweet peppers. I also like to add a small poblano pepper - ribs and seeds removed. Add a can of crushed tomatoes and 2 diced fresh tomatoes, Throw in a palmful of chopped cilantro and some parsley. Add salt and pepper to taste. Cook it down until it is fragrant - being certain to keep an eye out and not burn the bottom. Burned is BAD. Take out the garlic head and *voila* - easy sofrito.
It's a fantastic base for a lot of dishes.

I LOVE sofrito too! I grew up using it and use it in so many dishes. Makes everything so tasty!
I don't know what my kitchen would be without sofrito and adobo.

My family is from Haiti and we make something similar. I put parsley, garlic, green peppers, onions, salt/pepper and white vinegar in the food processor (or blender). I put it in a jar and use it to marinate most of my meat. I also use it in stews and soups.
You can buy Sofrito from the Grocery store. Goya makes two kinds: one that comes in a jar (Spanish/Hispanic section) and one that comes frozen in a plastic tub (freezer section)
