Any ideas for chicken, peppers, feta?

I have chicken breasts, red roasted peppers, feta cheese and an italian dressing.

Can I make rollups and bake? Roll the chicken around the red pepper and feta..then pour dressing on top and bake?

Anyone have any other ideas? And if this sounds good, how long do you think I should bake for? TIA

If they are thick chicken breasts, I would make a slit in them and make a pocket for the peppers and feta. I would cover and bake 45-50 minutes.

I'd probably grill up the chicken and make salad.

or, if you have a can of crushed tomatoes (or a few regular tomatoes) I would cut the chicken into pieces, add garlic, oregano etc and bake it with the feta cheese. kind of like a chicken take on shrimp santorini.

I'm not sure that I'd roll up the chicken with the feta and just the red peppers...I feel like it would dry out that way.
