We had general tso's shrimp w/ beef fried rice. Yum.

I don't have a recipe. I just made it up as I went along, but I can give you the basic gist.

For the rice

I used long grain brown rice and cooked it in veggie broth (you could use chicken, but I am a vegetarian), some salt,pepper and cayenne.

The peppers I cut the tops off (I kept the tops and cooked them as well just for cute presentation) and hollowed out by removing the seeds. I put a little olive oil on them ,placed them on a baking sheet and put them in the oven at 350 for about 15 min. I just kept checking them and when they were fork tender I removed them.

The stuffing

1/2 a vidalia onion, diced
2 cloves of garlic, minced
1/2 a cup of button mushrooms, sliced
1/3 cup of chopped asparagus
1/2 cup of chopped broccoli
1 can of corn niblets (I used the kind with peppers in it)
1 can of black beans, drained
1/3 cup of salsa

Put some olive oil in a sautee pan and add onion garic, cook until browned. Add the broccoli, asparagus and mushroom, cook until tender, but not soft. Add corn and black beans and salsa. Let simmer together for 15 min.

When the peppers are cooked, just add some rice and some filling. Top with a little shredded pepper jack and serve.
