Easter dinner for 2?
Any ideas for me? It will just be DH and I for dinner (and we don't like ham!)

what about
lamb chops risotto with yummy spring asparagus lemon mint braised artichokes baby lettuce salad citrus sorbet with mint for dessert....

Cornish Game Hens! I love those little suckers. Make them with some wild rice stuffing! I'd serve with a medley of spring vegetables tossed in rosemary infused olive oil and some fresh baked dinner rolls. Mmm...

I've never had those before... I'm kind of freaked out by them after seeing the show "The Girls of Hedsor Hall" (you probably have no clue what I'm talking about!)

ok...so hows about
grilled asparagus wrapped in serrano ham mache, frisee and radish salad with mustard vinagrette veal (or chicken) stuffed with spinach and gruyere artichoke, leek, and potato gratin vanilla poached apricots with zabaglione

you can easily replace the serrano for the prosciutto. I make a very simple mustard vinagrette with dijon, oil, champagne vinegar, S & P. lightly dress the seasoned greens.
I've never used the recipes above (I have my own bastardized version of the gratin and do a chicken cutlet stuffed the same) but epicurious is usually great with their recipes.
please let me know about the apricots if you make them. I think that is something my dh would really like...and I do plan to cook again...some time in my life
ETA: I noticed the recipe uses anchoyy paste. not sure how you feel about it, or if you've ever used it, but I LOVE it as a seasoning, and I LOATHE anchovies...so don't be afraid of it. it imparts GREAT flavor!

I'm not sure that I'll do the apricots because I'm not big on cooked fruit (see the "what do you hate that everyone else loves" thread )
I'm open to anchovy paste! I just might have to hide that from DH...
