Jarlsburg Cheese Soup
MIL gave us this recipe that she found somewhere.. and DH and i have made it a couple times. We made it tonight, and just thought i would post the recipe it really is easier than it might look.. and a great way to sneak in some veggies 
3 tbsp butter 3 tbsp flour 4 cups chicken broth 2 cups chopped broccoli 3/4 cups chopped carrots 1/2 cup chopped celery 1 small onion chopped 1 clove garlic, chopped 1/4 tsp thyme salt pepper 1 cup cream ( light or heavy) 1 egg yolk 1 1/2 cups shredded Jarlsburg
1)in large sauce pan, melt butter 2)wisk in flour slowly and let cook for a few minutes 3) gradually blend in chicken broth, and bring to boil 4) add veggies/onion/garlic spices.. cover and simmer for 8 minutes under veggies are tender 5) blend in cream and egg yolk, and cook to thicken 6) slowly blend in cheese 7) serve with some crusty bread for dipping
