2 recipes if anyone wants them :)

Tonight I made a spaghetti Squash "casserole"

Take spaghetti squash, cut in half, lay them in pie dishes or any sort of dish like that with 1/4 cup water, cook for 10 minutes.

With a fork, scrap the squash and put the strands into a corning ware dish (or something like it)


While squash is in microwave:

Take 4 Hot Italian Turkey Sausage, take casings off and cook until brown in pan but while cooking kind of chop the pieces with a spoon. (cook on med/high heat)

While sausage is browning:

Chop 1 medium tomato (I used my chopper!)
Chop about 1 cup of fresh spinach (again w/ the chopper!)

Once sausage is cooked and after you have laid the squash in corning ware:

Take 1 tbsp of mrs. dash, sprinkle on top of squash. Then take fresh parmesan cheese sprinkle it over the squash (as much as you want)

Then layer tomato,spinach, sausage and top it off with 1tbsp of mrs. dash again and parm. cheese

cook on 350 for 20 minutes

IT WAS DELICIOUS!! & good for you!

Chicken Rollatini

4 boneless chicken breasts
8ounces of thin sliced ham
1 cup baby spinach (chopped)
4 ounces of goat cheese
2 tbsps dijon mustard
1 cup bread crumbs
2 tbsp olive oil

-pre-heat over to 400
-Spray bakesheet w/ cook spray
-Arrange ckn. breasts on a flat surface
-Top each one with ham
- mix spinach and goat cheese (i melted a little) then spread over ham
-roll chicken up, secure with tooth pick
-Brush mustart all over chicken rolls & then roll in bread crumbs
-heat oil in pan, brown the chicken rolls
-transfer to bake pan & bake 20 min. or so

YUMMMMMMMMMMMM!!!! Definitely one my favorites.

these sound delish..just curios..what kind of chopper do u use to chop a tomato???
